Signature Omakase vs. Omakase Premium: Which One's Right for Your Event?

I get some version of this question on almost every call: "What's actually the difference between Signature and Premium?" Here's the honest breakdown.
Signature Omakase ($65/guest) is built around three fish — tuna, salmon, and yellowtail (hamachi). It's rolls, nigiri, and a few simple appetizers, all prepared on-site. I'd call it clean, fresh, and crowd-pleasing — a great fit if your guest list includes people who are newer to sushi, or if you want something reliably excellent without a lot of decision-making on your end.
Omakase Premium ($100/guest) is where I get to build the menu around your group specifically. It's a chef-selected tasting, courses served in sequence, using seasonal and less common cuts depending on what's freshest that week. If your guests are more adventurous eaters, or the event itself calls for something more elevated — an anniversary, a milestone birthday, a client dinner — this is usually the better fit.
A rough way to think about it: Signature is the version of me at my most approachable, and Premium is the version where I get to show off a little more. Neither is "better" across the board — it depends on your guests and the occasion.
